Heat some oil in a pot with lid. Add chicken and saute for 3-4 min until the outside of the chicken is sealed and browned. Stir in the rice and cook off for 1-2 minutes then add the stock mix (contains peas and chorizo). Bring to the boil, put the lid on and simmer for 25 min (if there is still unabsorbed stock, simmer for further 3 minutes with lid off, turn off and let stand 10 min with lid on before eating.
